Sterilization Process
The sterilizer uses saturated steam in a multi-stage cycle:
- Air Evacuation: Removes air from the vessel to prevent oil oxidation.
- High-Pressure Steaming: Operates at 3.0 bar and 145°C to inactivate lipase enzymes, keeping FFA levels low, and softening the fruit mesocarp to improve oil extraction.
- Pressure Discharge: Rapid release causes an expansion effect, separating the fruit from the bunches and preparing the kernels for downstream processing.
